Sandbox - EF2 Natural Chiroso

This Natural Chiroso from Jairo Arcila at Santa Monica in Quindío, Colombia, is a vibrant and expressive cup shaped by a two-stage extended fermentation. Pronounced sweetness rolls through in waves of tropical fruit and gummy candy, underpinned by a structured, juicy pineapple acidity. The natural process deepens the fruit intensity while the controlled EF2 fermentation adds a layered complexity that feels both lively and defined. It is a versatile, fruit-forward coffee that holds its character across brew methods.

The coffee should rest for minimum 21 days after roasting and be used within 4 months at the latest. The coffee reaches its maximum complexity within a certain period of time. In our experience we found that between 4-8 weeks the coffees are reaching their peak.
