Peru – Eudis Orosco [SL9 Washed]

Driven by the ancestral traditions of the Incahuasi cooperative, the couple Eudis Orosco and Victoria Atao grow coffee in total symbiosis with the Peruvian ecosystem, applying the principles of Inca agroforestry punctuated by the cycles of the moon.

On their two plots, Bella Vista and Finca Paulette, they were able to rehabilitate the Inca Geisha (a local mutation of the Ethiopian variety SL9), once abandoned for its low productivity but now sublimated by a high-altitude crop.

Their approach is based on a deep community collaboration, inherited from the concepts of Minka and Ayni (collective work and mutual aid), making it possible to transform ancestral expertise into an exceptional café while preserving the biodiversity and social fabric of their community.

For this batch, the cherries undergo a dry fermentation of 24 to 36 hours in their own mucilage. This ecological method, favored by the freshness of the climate that stabilizes the aromas, is followed by a final wash.

In a cup, this coffee reveals a profile of great elegance: it opens with delicate and deep notes of black tea, before giving way to the strong acidity of raspberry and pomegranate. This fruity complexity is perfectly balanced by the juicy sweetness of mandarin, offering a sensory experience that is both vibrant and harmonious.
