Colombia - FINCA LA RIVIERA [SUDAN RUME]

Grown at the renowned Finca la Riviera in Santa Rose de Cabal, Risaralda region, Colombia, this Sudan Rume Bioreactor Inoculation embodies Julio Madrid's philosophy. The goal is not to transform the coffee, but to fully unlock its aromatic potential through precise and controlled fermentation.

After pulping, the beans are placed in a bioreactor where they ferment for approximately 48 hours. The process relies on inoculating the coffee with a strain of indigenous yeast isolated directly on the farm. Temperature, acidity, and fermentation activity are precisely monitored to allow the yeast to express the coffee's full potential without completely masking the varietal and terroir characteristics. Once fermentation is complete, the coffee is washed and then sun-dried until it reaches approximately 401 TP3T of moisture. Drying then continues slowly in a humidity-controlled room until it reaches the desired 111 TP3T, ensuring excellent bean stability.

The result is an elegant and funky coffee, where fermentation brings definition, not madness. Notes of white peach, grapefruit, and elderflower emerge, supported by a silky texture and natural sweetness. A bright and floral cup that exemplifies the work of Finca la Riviera.
