DRIED COFFEE CHERRY HUSK
This cascara comes from the Argote family in Nariño, Colombia, a producer we have worked with before and one who consistently delivers clean, expressive coffees. The same care they apply to their washed and anaerobic lots is present here in the dried cherry husk. The result is a cascara that is bright, structured, and far cleaner than what is typically found in the category.
Expect a layered sweetness with notes of raisin, orange, hibiscus, and dried berries, carried by a clarity that reflects the high altitude and slow drying conditions of the region. Brew it as a hot infusion, flash it over ice, or use it as a base for cocktails or spritzers. It is versatile, easy to work with, and a quiet way to taste the work that happens around the coffee itself.
We value Argote’s cascara not just as a byproduct, but as a standalone expression of their farm and processing. It is a refined, precise example of how good cascara can be when treated with the same discipline as green coffee.
Use 20g of cascara with 400g of boiling water and steep for around 4 minutes. Adjust the ratio and steeping time to your preference.
Rinse under cold water before use.
