The process relies on inoculating the coffee with a strain of indigenous yeast isolated directly on the farm. Temperature, acidity, and fermentation activity are precisely monitored to allow the yeast to express the coffee's full potential without completely masking the varietal and terroir characteristics. Once fermentation is complete, the coffee is washed and then sun-dried until it reaches approximately 401 TP3T of moisture.
